PORTUGAL, THE NEW DAWN
Portugal is a country of plentiful seafood & fertile land. Yet, aside from its
egg tart, so little known is its food to the outside world. Which is strange, really.
That’s because Portugal, through its maritime history, has actually influenced many cuisines. Were it not for them, there would be no tempura in Japan, no vindaloo in India, no chili in Thailand, and tea may not be that popular in England.
Our cuisine pays homage to Portugal. But not like what you would expect.
It’s a new Portuguese cuisine as told by our chef Nelson Amorim. It draws from his childhood memories and family recipes, but rather than looking inward,
it embraces techniques & sensibilities from his experiences working in kitchens all over the world. Just like the Portuguese explorers in the past and their famous adventurous spirit.
