Native to Galicia in north-western Spain, the range comes from a dairy cow age 2 - 7 years. In comparison with other cattle breeds, Rubia Gallega spends more time to enjoy what Galicia has to offer, which contributes to its deep rich flavour and high natural marble.
Chef-partner Nelson Amorim is challenged to create 5-course menu highlighting the exceptional flavour of Rubia Gallega through different cuts of the beef. Ranged from starter to main course, he will journey you to an endless depth of flavour of this precious ingredient.
